Lemon cake with lemon glaze



I never quite got the point of why, "when life throws you lemons..." was supposed to have negative connotation. I mean, I LOVE lemons! 😍 Love lemon flavored anything ❤️ Even cleaning supplies in my house are always lemon scented. It's the cleanest, freshest most droolworthy flavor and scent, no arguments! 😊

We have a Kaffir Lime tree in our garden which is now laden with lemons. May I just say, I'm not quite clear on the lime- lemon difference. I thought the small ones are called lime and the biggies, lemons. But now I hear what I have in my garden is 'kaffir LIME', the leaves of which are used in Thai cooking. So yeah, I love both, so I'm good.

This is my absolute favorite lemon cake 😊
Even though I'm a big fan of butter cakes, this lemon - yoghurt cake uses oil and is delish! ❤️ And it's soaked in a lemon glaze coz like coffee flavour, lemon is not easily diffused into a cake batter, so you need to add a glaze or a syrup. 
So here goes....


               LEMON YOGHURT CAKE

 Full cream yoghurt - 1/2 cup
                     Sugar    - 1 cup
   Large eggs            - 3
All purpose flour.    - 1.5 cups
Baking powder.       - 2tsp
                   Salt.        - 1/4 tsp
Grated lemon zest - from one   lemon. 
                       Oil.      - 1/2 cup

For the lemon glaze :

Icing sugar - 1 cup
Lemon juice - 1/4 cup

Method :

Preheat the oven to 180 degrees celcius. 
Line the bottom of an 8 inch round baking pan and grease the sides. 
In a bowl, take the yogurt, sugar and eggs, mix well till well blended. 
Sift the flour, baking powder and salt, add this to the yogurt mix, along with the lemon zest. 
Add the oil and mix well. Keep mixing till everything comes together (it might look like it's splitting, but keep at it) 
Pour into the prepared pan and bake for 30-35 minutes, or till a toothpick comes out clean. 

For the glaze :
Take the icing sugar in a bowl, add lemon juice by tablespoons, while mixing thoroughly. Keep adding till the icing sugar becomes a smooth glaze.

Cool the cake for 10 minutes and take it out of the pan. Brush the cake with glaze while it is still pretty warm so the cake will drink up a lot of the glaze. If you want the glaze to look like thick white frosting, apply the rest of the glaze once the cake is completely cooled down and then use a spatula to spread the glaze on top. Take the glaze in a nozzle and make it drip all around the edges of the cake, for the drip effect ❤️
