7cup burfi
Diwali is juuust round the corner, bringing all kinds of beautiful calories with it 😊
This is probably my most favorite sweet ever! My mother in law makes it beautifully and this is my first time making it. And trust me, it's easy to make. ❤️ I believe it has 7 cups of ingredients but I have halved it, coz otherwise, I'll eat alllll of it!
SEVEN CUP BURFI
Ingredients :
Besan /chana dal flour - 1/2cup
Grated/dessicated coconut - 1/2cup
Melted ghee - 1/2cup(or1/4)
Sugar - 1cup
Milk. - 1/2cup
Cardamom Powdered - 1/2tsp.
In a heavy bottomed non stick pan, dry roast the besan (stirring continuously) on medium heat, till the raw smell is gone(3-4minutes)
Add in the grated or dessicated coconut and keep stirring.
Add in the sugar, followed by the milk.
Mix well.
Add in 1/4 cup of ghee and the Powdered cardamom.
Keep cooking on medium heat. The sugar will now melt and the texture of the burfi will change. Keep stirring.
It will thicken slightly, and now you COULD add in another 1/4 cup ghee. I don't do this. I only use the first 1/4 cup ghee.
Mix well and keep cooking till the mixture starts to leave the sides of the pan.
Transfer the mix into a dish that has been lined with buttered silver foil or parchment paper that has been smeared with butter.
Spread evenly.
You could add pistachios, cashes nuts etc on top if you wish.
Let it rest till it sets a bit.
Using a buttered knife, make lines as you would like the burfi to be served. Once cooled and set firm, cut completely and serve.
They look pretty with some rose petals all around ❤️
