Cream/Cake tart


If you are looking to make a celebratory 'cake' that's stunning and looks way more complicated than it actually is, this is the recipe for you. It's pretty simple to bake. You roll out the dough like you would for cookies and cut it into desired shape and bake. Then you sandwich them with Buttercream or cream cheese frosting and top them with fresh flowers, berries, chocolates etc. It's quite straightforward. My 15 year old daughter make this for my birthday 😊😊


                     CREAM TART.

For the dough :

Flour - 3 cups
Sugar-3/4cups
Honey-1/4cup
Eggs  - 2
Vanilla-1tsp
Butter- 100gms (unsalted)
Baking pow-1tsp
Salt -  a pinch.

Take a sauce pan, combine eggs, sugar, honey, salt and vanilla essence. Whisk with a balloon whisk or fork. 
Add butter to the mix and place on the stove, over medium heat. 
Keep whisking now and then, till the butter melts and the mix comes to a gentle simmer. Do not let boil. 
Take off fire and whisk in, the baking powder. 
The mixture will now become frothy and thick. Set aside to cool to 'warm',but not cold. 

Sift the flour once. 

Add half the flour to the now warm mixture and stir well. The mix will be runny. 
Spread the rest of the flour on the kitchen counter. Add the runny mix into the flour of the counter and mix well by hand. Work the entire thing slowly till it forms a slightly sticky dough.
Cover it in cling film and place in the fridge for an hour, until firm. 
Preheat the oven to 180 degree celcius.

Roll the dough onto  the baking paper in the thickness of a cookie dough and cut into desired shape (alphabet or number).
Make three of each shape (to be sandwiched)
Bake for 6-8 minutes, take out and let cool completely. 

For the Buttercream. 

Unsalted butter - 100 grams 
Icing sugar.       - 200grams
Vanilla essence - a few drops. 

Beat the butter using an electric beater for 3 minutes. Slowly add the icing sugar on slow and continue beating. Add vanilla to taste. Beat till everything is combined. 
Transfer the icing into a piping bag or a zip lock bag with a small hole at the end. 

ASSEMBLING :

On a cake board or a tray, stick the first tart with some buttercream onto the board. Then, make blobs of icing using the big round nozzle (wilton 2A) or just without a nozzle.
 Make blobs along the perimeter of the letter /digit. 
Place the next tart on top, make blobs of icing on it, place the thirt tart on top and make blobs on the third tart as well. 

Now, you may place the prettiest edible toppings according to your taste. Washed flowers, Berries, chocolates, oreo cookies etc. look stunning.
